What's my best bet?

Nikon D3100 (£310, £35 cashback)

Nikon D3200 (£400, £45 cashback)

Nikon D5100 (£415, £55 cashback)

Do Canon offer anything as good as Nikon at this price range?

The 5100 is a nice camera, and currently better than any Canon offerings at that level. Someone with Nikon experience will no doubt pop along shortly :D
 
The D3200 is a bit of a meh camera for the money. Resolution isn't everything (far from it actually).

Nikon's entry level offerings are generally better than Canons at the moment, but it's more about the system you buy into as it's a constant race between them, find something that feels comfortable.

That said, the D3100 is absolutely amazing value, and the D5100 is a stripped down version of the D7000, both are stunning pieces of kit and you can't really go wrong with either. Comes down to what you want to spend and if there is any specific feature you require. Remember though, glass is a better spend than on the bodies, so skimping to the D3100 and buying a good second lens is better than going for the D5100 and kit lens only.
 
They're all good, do you have any idea what you want to photograph?

Bare in mind you'll want a couple of SD cards, a card reader and a bag from the word go. So factor that into your costs.
 
Landscapes, buildings, cars - just general environments rather than portrait work. Quite fancy a new skill to learn and photography is appealing.
