Newbie to OC'ing. Need some pointers

I use to OC back in the days of my P4 but since ive got my C2D i havent bothered.

CPU = E5200 2.2Ghz
MOBO = Gigabyte DS3
2GB Dual Channel PC6400
Noctua Heatsink

Want to stick with Stock Volts as i dont want to raise the temp which will have a negative affect of upping the fan.

Looking for a modest OC to 2.6Ghz - 2.8Ghz

What settings do i need to change?
