I built my own PC and I now need to either upgrade or sell and start again, this is my spec:-

Gigabyte H55 UD2H
I3 overclocked to 4.2 (stable)
1 x 60GB SSD
2 x 2TB Samsung F1's
16GB 1333 mhz RAM(pointless I know)
ATI Radeon HD 6870 black edition
H50 water cooling

What would you guys suggest?

A bit of everything, Just got into Skyrim though so a lot of gaming, I would want big improvements or to me it would be a bit pointless.

Personally I would find a second hand i5 750 or 760 quad core, plug it in your existing board and overclock it as far as you can. You could go down the route of upgrading the board and CPU to sandy bridge - but this will be much more expensive and only provide a relatively small performance improvement over an i5 quad core (especially if you overclock it).

If you are mainly gaming then a new graphics card would improve your performance, especially in GPU heavy games like BF3. Instead of buying now I would suggest you wait a month for the Nvidia and AMD midrange 28nm graphics cards to arrive and buy one of these which is within your budget.

What FPS do you get on skyrim?

'Cos you have an SSD, more than enough RAM, you're either looking at a cpu/mobo upgrade, or a GPU upgrade..

As stulid says - We need a ball-park budget!

I have two samsungs with 1920 x 1080p DVI/HDMI

Was contemplating 3D but it seems to be a fad.

Crossfire any good or pointless?

I do want another motherboard with USB3 but I7's are very expensive.

No real budget because if it will be worth it then I have the money available.

If you want USB then you may as well just go for a PCIE card like this one- since that is the same technology the USB3 Sandy Bridge boards use to implement it (in fact the same NEC D720200 chip).
