Why make this fan so deep that it would barely be compatible with any ram? As far as I can see, Im only able to use the middle fan due to the depth that the fan would be sticking out if it had to sit on top of the ram slots.

Ive recently put some lower heat sink ram in but still no joy. How much lower temps would I be missing out on using only one fan?

heatsink is an NH D15 on an AM4

My DH15 wouldn't fit over my ram with both fans on my old 4790k but I did a quick bodge test to see what the temperature difference was. Under load, it was a couple degrees cooler at the most. For me it wasn't worth the extra noise and having the fan bodged to the cooler so I took it off. I've now moved to AM4 and haven't even bothered trying it again with two fans as one dealt with an overclocked 4790k fairly easily for 5 years!

Just move the fan up to allow for the heatspreader? Had no problems with the 8Pack RAM with my 1700 running a D15 other than the fan was about 10mm higher than normal.

Honestly, there is no need for front fan. It only improves temps by 1-3c at most anyway .. more spread at lower speeds becuase stacking fans with fins as airflow straightner increases static pressure. Lower speeds mean even less static pressure and anything resticting airflow does it more at lower pressure .. nothing running at 600-700rpm instead of 500-600rpm doesn't solve, and at that low a speed the fan is making so little noise we can't hear it anyway.

If you have space fit it to the rear of the cooler instead, assuming you have space above your VRM heatsink.
