I've been baking a lot lately, recently made a gateau with strawberry meringue buttercream filling and white chocolate ganache frosting.

But tonight I had nothing to go with my cup of tea.

In less than 5 minutes from fancying some junk, these were in the oven.

One egg got me 3 decently sized blueberry cupcakes/muffins.

I just used Mary Berry's 'Perfect Victoria Sponge' recipe and divided it by 4 as I only had one egg.

I threw roughly enough blueberrys into the mix once it was of a decent consistency and then baked until it was golden and passed the knife test. Plain old butter cream and blueberries for decoration.
