Non Gaming machine spec advice.

Hello All,
I am currently running a Q6600 with 8GB ram, it has severed me well for the last 6 years. However running multiple VMs is taking its toll.

In the next few months I am looking to upgrade, the new machine will be used for building virtual machines either using VMware workstation or Hyper-V, and the odd video encoding etc. I am not a gamer but have a brand new Sapphire HD 6870 that a friend gave me.

I was aiming for an i7 purely on the amount of threads it will have over the i5.

Cooler wise I was considering the K2.

The problem is I can’t decide on the spec, I have a couple of questions I am hoping someone can shed some light on and recommend what they would do?

Do I go down the Z77 spec with an i7 Processor but with the downside of being limited to 32GB memory.
Or
The X79 route with an i7-3820 knowing I have the ability to take the memory to 64GB in the future.

Also what memory would you recommend?

I will initially be looking at 2x8GB, but when I have the funds, buying more.

In terms of Overclocking I would like the memory to be running at a ratio of the CPU. I am not sure if that is the correct wording but way back in the day, I recall it was advisable to run the memory at a ratio that matched the FSB of the CPU the real world difference is probably negligible. I am a complete novice when it comes to overclocking, I am just looking for it to be stable :D

I was thinking either Gigabyte or Asus for the Mobo.
 
I can't decide if it is worth considering a Haswell CPU, as I know it is on the newer socket. I only ever upgrade when my current spec can't handle what I want it do. (usually every 5 or 6 years)
