Non-gaming rig required

Hi all! It's been a few years since my last proper build (an early Shuttle box back in 2004) so I'm a little rusty on the latest hardware etc.

I'm looking to build a rig capable of doing some intensive graphical design work (3D drawings etc) that could ideally substitute as a HD media streaming server (or HTPC) in the future. The budget is a little tight (circa £500) and I'll need a Windows O/S too although the budget doesn't include a monitor. Realistically, I want:

Dual monitor outputs (Current monitors are only VGA so presumably I'll need 2 x DVI -> VGA connectors too)
2 x HDD in a RAID-1 setup for data protection
Blu-ray player
7.1 Digital Audio output (inc. DTS)
Gigabit network adapter (future proofing)
It'd be nice to have HDMI out too so I can connect it to my TV in future :o
