I've started to play around a bit with photography but I never paid attention in Photography class back in college.

As far as lighting on a budget goes, what should I be looking for?

Also, in dark, indoor conditions, what should I do to avoid grain?

Right now I'm just working with a stock Canon REBEL T3

Avoiding grain in low light isn't easy. Generally the higher ISO you use the more grain you will get. However you need the high ISO to a usable shutter speed.

If you're shooting a static object the best way round this is to use a tripod. Other wise you need to use flash. If you're still using the kit lens then bare in mind it has a wider aperture at the 18mm end so will let more light in. Although you're on a budget a cheap fast prime lens will probably make a massive difference (eg a 50 f1.8).

This youtube channel shows some budget lighting techniques.

EDIT: Also if you're shooting a auto it'll be a good idea to move to Av and then force the camera to use the widest appeture (lowest F number) and spend some time getting an understanding of exposure. Some of these vids might be worth a look.

A flash and an off camera flash cord would be worth looking into, and maybe a book that deals in off camera flash techniques. Speedliter's Handbook by Syl Arena is a good one.
