Noobie question about fans

I didn't realize when I ordered the windowed Fractal North case that it was only the mesh version that included a fan hub, I have 3 Noctua NF-A12x25 fans at the front of the case is it safe to daisy chain them with 2 Y Splitters and an extension cable to run them onto 1 mobo header? (mobo is a Gigabyte Aorus B650 Elite AX)

In short, yes. Most motherboard fan headers can supply 1A, some go up to 2A, (usually labeled for pumps).
 
shouldn't make much difference which header you use, all can supply enough power and all should provide fan speed tuning

BIOS side depends on what you want to achieve.
It should recognize PWM/DC nature of the fans automatically and would probably default to fan speed following CPU or System temperature.
If you want a static speed or different behaviour, Gigabyte BIOS section for Smart Fan is not too bad
