Ok this is embaracing ive been working on and building PCs for nearly 3 years now and i've not had this problem, I bought a 5970 and everytime it went over 30% load the PC would crash out and then reboot.
I then RMA'd the 5970, had a look at the rest of the parts to check all was ok and had to RMA my CPU, also 1 RAM stick was busted so replaced that,

Now i am runnign 2x5850's with a AM3 X4 965 with 7mb DDR2.

Now its doing somthing similar, everytime i open WoW for over 5-10 mins it crashes the computer ... but i play CoD MW2 for 40-50 mins its fine!.... its find running without games running on a heavy CPU & RAM load though.
It seems to have difficulty using more than one screen at the moment as on my 2nd screen it was showing weird tears on the bottom half a lot, i replugged it and it worked, then plugged in a 3rd screen and it has that problem all the time =/

This leads me to believe it could be the mother board - dodgy PCI-E slots or software problems,

Any input or advice would be much appereciated, taken me months to get my PC up and running again so really wanna avoid Further RMA'ing

Running:

Coolermaster 1000w PSU

i agree with this as well.

i had a crossfire set up and would not play 3 game's with both card's running.

i took one card out and it played everything after that.

Im not sure both cards ARE running =/ they must be as one monitors plugged into each card but the FurMark test should give double the score =/

My PC crashed out blue screening when i watched Make Love not Warcraft (Southpark) on iTunes earlier... im sure a PC cant hate WoW this much =/
