Nvidia - Best bit depth/colour for UHD TV?

Hoping for some advice.

I have an LG B6V OLED TV with a 12 bit panel and can select the following outputs at 2160p/60hz

8bit RGB (Full)
8bit YCbCr444
10 bit YCbCr422
12 bit YCbCr422

For gaming, what the best setting?

8bit RGB full is best is it not ? That's 8bit 4:4:4.

8bit with 4:4:4 is best. Any HDR gaming will force subsampling to YUV 4:2:2/4:2:0, and you will notice dithering and less vibrancy/saturation all round.

10bit and 12bit 4:4:4 are not possible due to the bandwidth limitations of HDMI 2.0a. 2.0b overcomes this limitation but is sadly not available on the B6.
