Nvidia Control Panel Settings

I have a pair of 580 cards and although I know that in game I can max settings etc, ive found that in my Nvidia Control panel that I can seemingly force a certian quality.

Now my questions are:

1 - Do these override anything I set in game?
2 - Do I leave things like AA and AF as application controlled or could I default htem myself to something?

2b - If the answer 2 is to change them to something myself, what should I change it to?

Atm I have:

Ambient Occlusion - OFF
Ansiotropic Filtering - App Controlled (i can go upto 16x)
Antialiasing Gamma - OFF
Antialiasin Mode - App Controlled (i can go upto SLI 64x CSAA)
Antialiasin Transparency - OFF (I can goto 8x supersample)
CUDA - GPUS - All
Maximum pre rendered frames - 3 (i can go to 8)
Power Management - Adaptive
SLI Rendering mode - NVIDIA Recomended
Texture Filterin Ansiotropic sample - OFF
Texture Filtering Negative LOD Bias - Allow
Texture Filtering Qualitu - Quality
Texture Filtering Trilieanr - On
Threaded Optimization - Auto
Triple Buffering - Off
Vertical Sync - Use 3D application setting (note I dont have a 3D monitor)

All help appreciated, im sure im not getting the best from my cards tbh
 
1. Not if you have App Controlled set. For instance Antialiasing Mode has an option "overide any application setting" it also has "enhance any application setting"

2. Upto you, I used to alter them but I tend just use the ingame setting.

2b. What ever looks best for you !
