10 years?Would it be wise to put one of these in a system with a 10 year old Corsair HX520W PSU? I'm sure it'll be powerful enough and it's been flawless since I bought it but the age concerns me tbh.

No i would not recommend it. 600Watt PSU is recommended but with it being 10 years old it will have had a fair few hours usage. Over time a PSU degrades unfortunately so its peak power output may not be anywhere near 520 anymore. Perhaps more likes 460 - 480 at best depending on how much usage you had out of it. That is cutting it very fine as id expect the 1080ti to use around 280 watts peak TDP and perhaps hitting over 300 if you overclock it. That's not leaving a whole lot of room for the rest of your system.
