TBF i'd just look for what cheap, as ling as you get pcie 3.0x4 or faster your never going to notice the differance

So your top slot has a heatsink, have you already got a drive in that?

Your second slot is bare, but will sit under the GPU if it's a large GPU (3 slot cooler) so you might be tight on space.

If it's you first drive, then get one without a heatsink and use the motheboard plate because if you remove the heatsink from the drive you can invalidate the warranty.

I would get the SN770 2TB for £105 unless you want one with dram cache, maybe the Kingstone Fury Renegade for £125.

Basically currently i have two drives installed:

1 x crucial p5 250gb

1 x samsung 980 1tb

I plan to take the 250gb and replace is with a 1/2tb drive and then remove some extra SSD drives

Personally for 1 and 2TB drives I'm using Samsung 990 Pro and SK Hynix P41 on my main systems and Samsung 980 on my other systems.

your board douse support pcie 4.0x4 so you should be looking for a 4.0x4 drive, but in the real world you will notice next to no difference
just look around at prices, and reed speed that all that matters really.

P3 plus is a mid tier drive, nothing wrong with it, but unless it's really cheap there's usually better prices for little more, or the same price.

SSD pricing is very tight, the difference between a top end TLC drive with DRAM is usually little more than budget QLC dramless drives.

is there any advantage of me ghosting that drive on to the p3 1TB plus? ie will it be any quicker? or will there only be a very small difference in speed?
