SO it seems Cam wont register CPU temps with Zen 3 just yet. Which is a royal pain for anyone like me using it to control Rad fan/pumps speeds on my AIO.

NZXT have stated they are pushing out an update mid November:

What is everyone using to control CPU temps in the mean time ?
 
Ah, this explains why CAM and the display on my Z73 shows 0 degrees! HWMontior doesn't show temp either. The only thing I've found that does is Ryzen Master. This is my first red team CPU in a very long time though, so I don't know if it can be used to control fan speeds.

Based on the advice of the link you gave above, I've just changed CAM software to monitor based on liquid temps for the pump/AIO fans and GPU for the case fans.
