I am thinking of getting 2 x 30GB and using them in raid0 on my UD5.... would that give good speeds ? would to 2 be better than one 60GB ?

I would like to know that as well... I think Vertex will be very good even as single.
Consider APEX - they have higher read speeds - 230MB/x instead 200, same write speed. Don't have cache but I would consider RAID with Apex than Vertex.. hard to say.
One 60GB Vertex will cost £200, one smallest Apex (60GB) will cost about £150.
Another idea is to RAID Solid SSD - 2x30GB will cost you ~£130 - I'm not sure but then you would not have to worry about any speed limits cause RAID will be fast enough...

i had two Solid 60gb on raid 0 but still noticed lag not so on my v2's just what i noticed maybe i set them up wrong

RAID will lag with onboard controllers. You need cache to fix the "lag" problem, either built into the drives (a-la Vertex,Intel SSD's) or built into the RAID controller.

was running them off adaptec 2405 sas card

Did you make sure that write-back cache was enabled? You usually have to force it on if you don't have a battery backup unit on your RAID card (because anything still in cache would be lost if the power went).
