Off camera flash help..

Having started photography in the Studio, I've always been around flash.
I have been doing weddings now for the last couple of years. I mainly use natural light outdoors and during preparations providing available light allows.
I am also comfortable using flash as a fill light when out doors or tend to bounce it from ceiling or walls when indoors.

However, I want to get a little bit more creative with off camera flash. Its mainly the evening wedding receptions I want to try something special. At my wedding on Saturday I had the other tog holding a speedlite from the side, while I shot the B&G on the dancefloor, with a speedlite resting in the DJ's speakers. It looked good for a first attempt to be honest.

I have 3 580EXII's and a cheap set of calumet Transmitter & reciever.

I also like the dragging the shutter and rear curtain flash techniques but never seem to nail the dancers exposure and the ambient light (I have only tried this once when I was just playing around at the end of the night)

Should I get pocket wizards? Do I need to use ETTL? Can I use the flashes on manual and use a transmitter/control panel to control flash outputs indivdually? Camera will be a 5D MkII most of the time.
