I think you just need to be not worried about money to enjoy that place, I went there for 3 nights on the back end of a month and a bit more trip to Bankok and Australia so was quite broke.
We stayed in a hotel near the airport, it had nice pools, and a restaurant / bar complex thing near it as well, as well as having another hotel near the beach owned by the same company.
We visited one of the bars in the complex and it had the most amazing selection of wine I think I have ever seen, all behind this big glass wall in this temperature controlled room and upstairs they had this big vodka bar, most of it was just too expensive for me though, I had a pint of Peroni and I think that cost me £8
We went to the mall of the Emirates and Dubai mall, lots of sales on at the time we went so there were some cheap stuff to be had, as well as snowboarding at Dubai Mall.
The place is really hot, even at night its pretty unbearable for long unless your laid on a sunbed drinking a beer.
We tried to go to the Gold Souk(sp?) as well and wasn't impressed, ended up walking towards the coast and ended up at a fish market lol.
The sea is also really warm, in fact I wouldn't even describe it as nice with it been so warm already!
Despite all that would love to give it another chance, perhaps with someone who knows the place.
