Ok so build a server or build a gaming rig....opinions

Ok so a vague title but the issue is complex - Some background....

So for years ive run a high end machine for work/play its got 32Tb of storage on spinners, 6 TB across 3 NVME gen 4s 64Gb of DDR4 3200 a 5950X and a 4070Ti. Recently ive become frustrated by some gaming performance issues and the reality of a windows reinstall has reared its ugly head. Now, i fix computers for a living, just reinstalling windows is no biggie. But this machine is LOADED with specific apps, VMs, docker containers and background services that are just a huge PITA to restore and will result in a ton of downtime. Especially since its just to make games not drop frames at random.

So it got me thinking about separating the day to day from the more server-type functions. This gives me 2 options - 1) build a gaming PC, maybe a 7800X3d on DDR5, pull my 4070Ti and replace with an ARC380 in the server for plex duties. 2)build a lower end server for hosting the large data store and use the 5950X/ram/mobo and 4070Ti as a gaming machine. Not sure exactly what spec id go with on a server front tbh but would need to be cheaper than option 1) otherwise i might aswell go with that.

Opinions?
 
Thanks all I've gone for the 7800x3d build. My final q is

What gpu to put in the old rig for plex transcode? Obviously it's got the 5950x which is a beast so do I need a gpu? Ppl mentioned arc a380 elsewhere for cheap av1 etc.

Opinions?
