If the PSU only has 1 x 6 pin PCI-e is it ok to use a 4 pin molex to 6-pin PCI-e adapter cable, any problems likely to arise, I assume it's just a generic connection and the graphics card will suck all the electricity it needs from the PSU?

It's up for debate, I personally wouldn't.

Some recommend using 2x 4-pins to a 6-pin PCI-E connector as that should be ample.

The power draw from the 4 pin may not be enough that a 6-pin PCI-E connector requires for the GPU.
