Old Timer First Timer

Not built a PC in the last 25yrs but did build quite a few for friends & family, the last one a Pentium 4 with a mahoosive 256mb ram

I've just retired & although my eyesight is shot & my hands a little shaky I'm seriously considering building a Ryzen 7 9800x3d with RTX 5080 graphics system so I can get back into flight sim's as an indoor hobby. Budget is £2500, can it be done & what is the best mobo to start the build at this budget with???
