Older Android vs 4.1

Is there a huge difference between:

3.0
4.0
4.1

The costs of tablets vary so much with the older versions of Android seeming far less than those with 4.1.

Is 3.0 or 4.0 restrictive in any way?

You'll be wanting 4.0 at the very least, performance prior to that is very laggy.

What is fairly easily done though is you could get one that comes with 3.2 or 4.0 etc and flash a custom ROM to the latest 4.1.1 (or whatever is available).
 
I bought an as-new Xoom last night (cheap!) with 4.0.4 and have just downloaded an upgrade to 4.1.2 after reading that it was released to Motorola devices last October.

It's now unzipped but not being a teccy I can't actually install it! The folders showing are:

META-INF
PATCH
RECOVERY
SYSTEM

Each then has sub-folders but these are too numerous to list right now (unless I need to).

Can somebody advise how to finalise the install please?
