One XT1900xt/x = two 7800gtx 256mb in SLI

No it would get hammered by SLI.

You'd need two X1900's in Crossfire even then the difference won't be massive especially when you consider the cost involved.
 
You see, while the X1900XT-X has 48 pixel processors, it only has 16 pixel pipelines. If it had 48 pixel pipelines then I imagine you could expect similar performance. Maybe a bit less because it only has 8 vertex shaders to the SLI's 16.
