Opteron 165 temperature question

Hi all,
Having just got a opteron 165(thanks to all who helped with the choice!!), I have a few temperature questions....
Bit of back ground first...
CPU: opteron 165 LCB9E
mem: 2 x 1gb corsain XMS 3200
Grx: 7600GT
System: Shuttle SN25P

I've used AS5 as thermal paste, and am aware that it needs time to "settle" (any one know how long this process takes??)
Now, on to the temperature bit. I've got speedfan set up on the machine, and the motherboard CPU reading is 39C at full load on Orthos. I'm also using core temp, and this give me readings of core1: 49C core2:51C.
I am wondering which one I should be using as a pointer in terms of overclocking, and also what kind of temperature I want to be looking at for a max.

The idle tempa according to core temp are 32 and 31 C load is 49 and 50. Sound reasonable?

Yeah, I was quite surprised by the heat handling capabilites. Currently running at 2484 (276*9) orthos testing, looking at 50 and 55 deg c for the cores. Where do you think I should limit the temperature to (knowing when to stop basically)? Haven't had to do anything with the Vcore yet to..
