When running the CPU only tests Orthos is rock solid at stock on my E6600.

However, the ram is running 800mhz 5-5-5-12 (stock speeds/timings) and throws up errors when running simultaneous ram tests within a few seconds. Does this mean I've got faulty ram?

Not necessarily. If you want to test the RAM specifically, I'd suggest you use www.memtest.org and test each DIMM individually for 3-5 passes each. If you use an ASUS MOBO, you will need to disable Legacy USB Support in the bios as there is a conflict with this setting.

Also, a complete listing of your spex on your system will help.

Arse, disabled it and memtest throws up errors straight away.

System is:

Asus P5N-E SLI
E6600 w/ scythe ninja + 120mm fan
2 x 1gb Micron DDR800 cheapo ram
2 x 250gb 7200.10 drivers in raid 0
X850XT

Funny thing is that CS source works perfectly and I've never had any crashes. But it's failing memtest in a big way!

Try the memory in another board (friend or shop) and see if it still gives you errors, If it doesn't you know it's your motherboard, Either it's incompatible or your memory voltage/settings need tweaked.
