i work for a company which has 3 branches with 3 sales teams, we are selling a new product which we want to do as a seperate item (away from the company name) so we have a email address setup just for that item.

what i wanted to know is can we setup the email address at all 3 branches (for sending emails) and to receive emails just on the sales managers computer.

If I understand your post right, you want to have an e-mail address which people in the sales teams can send through, but only the sales managers can actually read the inbox?

What type of email server is it?

If you're using IMAP or POP3, so far as I know, on the profiles within the teams there should be nothing stopping you from setting the right outgoing mail server, but just not setting an incoming mail server or setting a random one which wont get a response.. there may be a more elegant way of achieving this :)
Then set the correct server for incoming emails on the manager's computer and only the manager will get an inbox..

Problem with this is, if the server names look similar with the same credentials and you can't restrict options, there may be little stopping a user from gaining access to the inbox..
 
thats spot on, i will try that tomorrow.

as far as stopping access to the inbox, we dont need to as we just want alll replied emails in one place so that there is no confusion, if there a better way please tell.
