Anyone had much experience with setting up and/or using these two together? I'm looking for a decent book which will take me through the concepts and setup of your typical smartphone device along with Exchange 2003.

What smartphone do you have? RoadSync from DataViz is a very good solution, so good in fact that it's bundled with the Sony Ericsson p990i. Syncs you calendars, contacts, emails, everything and works on a push basis.
Don't think you need to go buying a book just to set this up. There's loads of guides out there - check msexchange.org for example.
Although I'm assuming you have Exchange 2003 already set up - after just reading your post again I'm not sure if you're wanting to learn about setting it up too?
I'm not a big believer in books, someone else here would need to guide you in that direction. But there's so much out there on the web, plus a yearly investment in Experts Exchange would cost the same as a book or two but cater for so much more.
