Overclock settings not saving in Bios after PSU change?!

Howdy, i've been fixing up my parents system giving them left overs from my previous build.

Mobo is an Asus, p5-32n-e SLI plus.

I've swapped the PSU for an FSP Epsilon 700W and since doing this I can't overclock it.

I can change any bios settings and they are still there once rebooted but if I change anything in the overclock section, even changing the mode from AUTO to manual and upping the FSP by 1 upon F10 and going straight back into the BIOS the settings are back to what they were previously.

What would do this?! All i've done is change the PSU?

It was pre-built system quite a few years ago but i've obviously rebuilt it from scratch with different parts and its been fine the years i've used it and was overclocking the day before fine!

Anyway I think I fixed it, I feel a bit silly.. I installed an ASUS OC utiliy, which didn't actually work with my board, but uninstalling it has let me change some settings and the boot screen is showing a change in Ghz :)
