Overclockable?!

Hey guys got my new system so I was wandering how easy is it to overclock an:

i7 930 @ stock 2.8ghz
GTX 560 Ti @ stock

I have 'Smart6' installed shall I just use that to overclock?

What's a good temp to try and keep the cores at as at the moment at stock all 4 are between 40-50 while the system is idle after 5 hours of the system being on!
