I doubt changing the crystal will work, yeah it'll make the CPU run faster, but games were generally coded with a fixed clock rate in mind so you'll find that your games will be "sped up" rather than getting a higher fps.

Speccy games crashed at the best of times so I would think overclocking the setup(if it were possible) would most likely result in the same effect.

It was often due to overheating, but with a decent fan setup they could run quite stable. Some games would always crash though regardless.

Which Spectrum game would make a good online multiplayer?

Laser Squad and Lords of Chaos were made to be online multiplayer ahead of their time. They were actually hotseat games (in a similar vain to X-Com), but due to being hotseat, there was no element of surprise. They do however work very well on PSP emulator.
