Overclocking and fan speed

I have two 120mm fans for my prolimatch megahalams CPU cooler. I am going to be overclocking the CPU. Is it best to have the fans on full spin all the time or use some sort of speed adjuster and let them rev up to full when needed? The fans are pretty when on a full spin so I don't mind them beeing on full rev all the time.
 
I tend to use a fan controller and manually adjust, but you could set them low and test the temps, then high speed and check.
 
you can get fan controllers that operate on heat. You can also just get a man one, I personly have a sunbeam 6 channel which has put up with some hefty 120's. When im browsin the web or just watching a movie they are on low and its fairly quite. when its time to strap down and whoop sum @zz in BFBC2 or L4D2 i crank those puppys up and go into kill mode :). fan a man fan controller is nice to have IMO
