Overclocking, core readings & temperature jumps

I've started trying to OC my E6300, I'm not very experienced so I followed the instructions from the 'Gigabyte DS3 owners thread' and the 'Gigabyte ds3/ds4... guide'.

There's a few things I don't understand, I've set the vcore to 1.45, but speedfan shows vcore1 as 1.44v and vcore2 as 2.19v... what does this mean?

Also is it normal for digital temperature readings to jump very quickly when the cpu is stressed? from idling around 44/45 (at 2.3ghz on 1.45v) they jump to around 58/59 within seconds of starting sp2004 testing. When the tests are stopped they jump back to 45/46 in a similar time. Literally about 5 seconds. How accurate are these readings and do they mean I should reseat hs/fan?
Lastly, with the memory multiplier set to 2, I'm only getting 660mhz from the memory, but if I set it to 2.5 I'll be getting 825, would it be ok to push the memory to this?

vcore 2 is probably your ram voltage.

what ram is it? if its rated at 800mhz then 825 wont be too much. the only way is to try, and test with memtest to see if its stable.

As far as temps go, are you on air? if the temp shoots up quickly and just stays there you should be ok. as long as it doesnt keep creeping up and up and up.

if you are worried that much, try reseating it with a little less thermal paste.

It's geil ultra so it's rated to 800mhz, I am on air, on a zalman 9700 at full fan speed.. kind of expected lower temps! I'm not very good at getting heatsinks on as it requires so much pressure on the clips.. I start worrying that I'll damage the cpu somehow and stop, and inevitable the thing ends up sliding around/twisting on the chip. Bring on watercooling!
