I've had this cpu for a while and did a simple o/c by changing the multiplier from 9 to 10 (or was it 10 to 9) to go from 3Ghz to 3.3Ghz.

I was going to sell it for an i7 965 but a redundancy cloud means this is delayed.

Sorry for asking a n00b question but how can I go about increasing the oc?

The motherboard is Gigabyte GA-X38-DS5
Ram is 2 x 2Gb OCZ PC6400
Cpu is cooled by Arctic Cooling Freezer Pro
 
You put the multi from 9 to 10. Now put it from 10 to 10.5 or 11.
After that if it becomes unstable you will also need to give it more Vcore.

I had my Qx9650 running at 4Ghz 24/7 with just air cooling. And for benching i used to have it at 4.4Ghz.

I used to bring up both FSB + Multi number to get my clock.
 
1st: set the multiplier to owest and up your FSB until your pc unstable ( add more votage on VTT and NB abit wil help your pc stable @ high FSB). And here you will find out how much FSB your board can handle.

2nd: Set back multipier to wherever you fancy, I woud set to 10, and now up your FSb again which is unstill your pc unstable and add more voltage to your cpu, remember to set the NB voltage, VTT, Ram voltage. to match up your speed and cont. do it til you could hit your match your FSB. If you couldn't match it mean you reach your cpu limit.

I have set multiplier to 10.5 so running at 3.5Ghz and, so far, so good.

Will look at pushing it a bit further during the week :)
