Overclocking Ryzen 7 7700

To overclock do I just need to select one of these and that's it?

I presume 85 is the max setting before it throttles, it never reaches that so I've set it to 85 degrees. What is the -20mv is that underclock?
The -20mv is under voltage so the CPU runs lower voltage at a each frequency which means it will use less power at the same frequency and boost higher. I would try the tj max 75c with the -20mv to start with then if that's stable you could try -30mv as well.

OK I've set it to that. I'm running Ryzen master, curve optimiser Do I need to re-run curve optimiser everytime I change setting?

I get a +100mhz increase over stock, that seems a bit low?

Running Noctua D14, three 12cm intake, one 12cm side, with large vent on the side, two 12cm exhaust, and a top 8cm mesh vent

Depends on what you're trying to achieve. If it's max frequency you're after then I would do that first, and then curve optimizer after. Or do the reverse if you're mainly looking for power efficiency as they will both affect each others stability.
