Overdue Upgrade – Advice Needed

DDR3 is still fine, it just won't carry to the next platform.

Intel i5 barely scales with faster ram, so not worth spending excessively on, especially at this price point. Default is 1600Mhz, and anyting faster you'll have to manually enable. 2400Mhz seems to be a decent price/performance point to me.
 
Arghh! Decisions, decisions! Now I'm thinking I should go for an Intel board that would take a 5th generation CPU for future upgrade but an i5 CPU for now. Z97? Any suggestions for that plus 2x4Gb RAM and PSU with change out of £300? Running 2/3 monitors would be required. HDMI, DVI & VGA (possibly / probably).

One other thing, I'd probably like to upgrade from 8gb to 16gb RAM in the not-too-distant future, how much performance would I sacrifice buying 1x 8Gb now compared with 2x4gb?
