The chipsets are different for starters. The P5B makes use of the Intel 965x and the P5N uses Nvidia nForce 650i. If you're opting for the P5B make sure you go for the Deluxe version.
Both boards are good clockers but the nForce will support SLi 8x or single card 16x. If you want SLi 16x you'll have to go for the P5N32-E.

i will not be doing SLI. Only single graphics card.
I'm using an A8N-SLI with Nforce4 on at the moment. Kind of used to the BIOS on this, so will Nforce5 be similar?
From what I have seen or heard the chipset on the P5B Deluxe is the best around but if you want something a lot cheaper and just as good check out the Gigabyte GA-945PL-S3 which is on OcUK here and is currently only £52.86 at the time of writing which is much less than the P5B Deluxe.
Are you going for an "anything goes no expense spared" overclock or just a stable one with a sensible budget?
