This has dvi, display port and hdmi so if i put dongles on the display port and hdmi to dvi then could i use three monitors on it?

Well, there is a problem then as i have just bought 2 24" 1920x1200 monitors with the plan of buying another screen possibly a 22" in May for triple gaming monitors.

So is there any way i can run the full 1920x1200 resolutions on the 3 monitors?
 
Unfortunately it comes more down to GPU than CPU for games. You should be fine though. If you consider that a a 4870X2 is double 4870's, and a 4870 as about 1.5x the performance of the 4830, then you should, theoretically, get about the same frame rates for your triple screen setup as a 4830 would on a 1920*1200.

Not so much with the i7
 
What do you mean? i7 doesn't magically increase frame rates.

If you have a dual core E8500 with a 4670, an i7 with a 4670 will perform pretty much equally, give or take a couple of fps.

Where it shines is when you have a lot of GPU power. If you had two 285's with an E8500 and two 285's with an i7, the i7 WILL have better FPS, not because the i7 enhances it, but because the dual core is bottlenecked. An i7 with a 4870 is NOT identical to an i7 system with, say, three 4870's.

That is what i mean. But i didnt write it as i thought as we are talking about a 4870x2 people would assume that.
