Pate - Any good recipes?

Considering making some homemade pate for Christmas Dinner starter. Recently bagged a cracking Magimix food processor so hoping to make a nice chicken liver or alike pate. Must be smooth as other guests won't eat it!!
 
Okay, ingredents -

1lb chicken livers
1 lrg onion
1/2 pack of butter for cooking, 1 whole pack for sealing
Handful of mushrooms
salt n pepper
2tsp thyme
1tsp sage
2tbsp whiskey/brandy
2tbhsp(ish) cream

Method (wait, is this science again?)

Cook butter, onion, livers, herbs, salt n pepper, mushrooms and alcohol until livers are cooked. Turn down heat and add cream (make sure it's cool enough so it doesn't seperate). Wizz up with a wizzer thing. Pot up and pour melted butter on top to seal.

This doesn't make the same set stuff you buy, it'll be a little runny, but easily spreadable and not 'too' runny at all. If anyone asks it's traditional light-set. ;)

All the best pate I've had has a thick mousse consistency to it, so sounds good to me! I think ill give this a bash myself, be nice to make my own.

Is it normal to add whiskey/brandy btw? Or is this a more seasonal recipe?
 
Chicken liver paté <3 My Grandmother makes great paté, she's actually got some chicken livers in the fridge at the minute, i'll ask her for her recipe
