PC build cooling setup

Hi my 18 month old build is :-
ROG STRIX X570-F GAMING Mother board
AMD Ryzen 7 5800X 8-Core Processor, 3801 Mhz, 8 Core(s), 16 Logical Processor(s)
Installed Physical Memory (RAM) 64.0 GB
AMD Radeon RX 6700 XT
Main board and CPU is water cooled and GPU fan cooled, with 6 4" fans.

All games have no problems but one game overheats my PC
I have followed youtube video`s of configuring the GPU and I got an extra 30% out of it.
Though the CPU still seems a little hotter than usuall.
2month`s ago I had the PC stripped, cleaned, fresh fluid and fresh paste. Also full bios update.
About a month ago I accidently updated the BIOS and I think this messed up my water cooling. I did this before just after the build, and after taking it back to get it checked, the updated BIOS reversed the cooling system on my PC, as I started to get a lot of crashes and freezes.

Im asking, how do I check my pump settings in bios and adjust so they function properly? I did have a look but cant make head`s or tail`s of it.
Also are there any apps that can be used in windows 10 that I can easily adjust and monitor the pump settings and temp?
I can adjust the GPU fans with Adrenalin app.

Current issue is the CPU temp has gone from 60 deg C to 70-75 deg C, this 15c jump seems to cause a shut down after an hr or so at constant temp jump. At 60 no issues. And assuming the pump needs readjustment if my BIOS update changed the settings.

TBH im new to water cooling, and I dont know my setup, I never kept up with the tech so dont understand most of the new gear out now. Yes its a watercooling issue as had the same before, and 75 is too high it locks up and crashes only pressing the reset button will restart. I Monitoring is done though Adrenalin software I can monitor the temps there. the GPU is easy to setup as well as the CPU though the same software, but I cant control the water system. I know its though the BIOS but dont know what to change. As the shop said yes the water cooling was backward. running full pelt when CPU cold and off when temp high
 
I didnt say I overclocked it I have underclocked it

My system runs fine at 60 65 tops. anything over crashes it out, As I say I did take it to a shop and they reset the water pump to where it should be and for 18 months no issues. I managed to find a decent YT video on setting up best performance with out loosing too much gfx, basics is turn off un nessasery features for GPU, No the CPU isnt overclocked my PC is more powerful enough, readjusted the GPU freq to 2600 min and 2700 max thats 100 below max and under volted by 90mv. After doing this my fps jumped 30% higher than before also GPU temp dropped from 75 average to 65 average. this has cut out GPU issues and crashes, but still getting CPU issues. My cpu will run all day with no issues at 60. but over 70 after a short period the system crashes out. Ill have another look at AC, if that dosent work ill take it back and get them to reset it.
 
I was running stock till I update by BIOS by mistake and I started to get issues thats why I adjusted my settings. I got AC working and main fans are now running 100% see if that makes a difference, cpu fan is saying 2288 rpm, AIO pump 2260 rpm.
 
bios update can affect everything
including stuff in pcie slots like a gpu
or make your cpu unstable etc
wouldnt be first time i have had to roll back bios update
because it caused problems rather than improved things

but now you have control of fans and pump
see what happens
your AIO pump may be able to go higher rpm
though would need to know which AIO to be sure
unless its already as high as the software can put it too
Tbh im not going to mess the with bios again, I could prob roll it back but that might make it worse or not restore prev settings, yea unfortunately the AC only has basic settings either silent, standard, turbo or full speed I cant individually change speeds or max them out if thats possible

thanks for the info, I can only get AI suite 3 which some people say is the same thing. With AC I maxed out the water pump and seems to be keeping it under 60c, I havent tested yet, but so far for the last hr no issues, ill try AI3
 
Thanks again for the help. From AI suite, I can adjust everything I need to. Yes my system has a threshold set. My GPU has a max temp of 80c before shutdown. Adjusting GPU to under power it has helped also limiting the FPS also decreased the temp back to 60-70c
CPU is set at 75c threshold before shut down. and the water pump was throttled down. Ive ramped this up to run regardless if it needs it or not. Results are much better its back where it should be around 60c and has a +- 5c or so does occasionally get to 70 for a few seconds.
Rechecked all drivers, only one out of date was the sound card drivers, now up to date havent tested yet.

Is there away to check the logs on a system failure to see exactly what is going on? Assuming a log is created if the PC crashes and or the reset button is pressed etc.
 
Thanks found the logs, and errors, wow 18k+ erros, 99% of them are to do with EAC and causing my system to crash for no reason and not freezing my system
