PC build for PremierePro/AfterEffects work, Rerendering, Gaming 1440p, Recording

Hi guys, hope you had a great Christmas. Looking for some advice on a build. Ive been around the block enough to know there is always something new to wait for around the corner, but that if you always wait, you never do anything.

Currently have a 2 year old:
4790k, gtx980, 16gb quickish ram on a asus ranger VII mobo. 2 small SSD's with a 1Tb spinner.

Im building a gaming YT channel in my spare time and I do a LOT of premiere pro, after effects and rendering work. I game at 1440p and can get perfectly good frame rates. but when Im recording with OBS, in order to maintain recordings at 1440p60fps for YT, I have to limit frames to 80fps in game to give OBS the headroom it needs to not drop/lag encoding frames.

What I want (aside from the moon on a stick):
A CPU which is good at encoding. I was looking at the 6800/6850/6900. But I read so much contradictory stuff about these CPU's. And the 6900 is sodding expensive.
I want a single GFX card solution. Not interested in SLI one bit.
Whilst 16GB of ram is adequate for Premiere/After effects work, it does max out more often than i would like.
Im very interested is the new SSD's which plug into the Motherboard (i know sod all about them).
I want a big spinner HDD which will be used as a location for my raw recording footage, and an intermediate location whilst working on premiere projects. I can fill a 1TB drive in less than a week if im recording and being too lazy to reject footage.
Im going to get a bigish case because I love wide, slow spinning case fans that are quiet and ill probably water cool the CPU so looking for a water cooling kit which does not require a degree in engineering

Sage advice me up please!

Well, I wont foolishly say "as little as possible", becasue i realise Im asking for a beefyish spec here.

Lets say £1800 max. I dont need any peripherals (mice, kb, monitors etc). Also I dont need a PSU...the one I have is a superflower 850w and its solid.

So: Case, fans, cpu, cooler, gfx, mobo, ram, water cooling kit. Might get a soundcard depending on the mobo and whats on it.

I would rather not spend 1800 tho lol. And maybee you are going to tell me 1800 is laughably little. i dont know!
