PC single player co-op campaign with dual monitor support?

I have 2x 25" monitors.

I've played some PC single-player games in co-op mode but it uses half and half of only one monitor.

Seems a waste, and I feel I have the hardware to push two screens.

Are there any games that fit what I've described?

You should be able to use Nvidia Control Panel to set a custom gaming viewport encompassing both monitors.
