PC upgrade, downsizing to one solution for Plex/Gaming

I'm looking at downsizing from 3 machines to one and a backup solution. Right now I'm running a server solely for Plex, a gaming machine and also a backup solution for both. The setup is:

Plex Server - Win 10, Lenovo TS440 with Xeon E3-1245, 16GB Ram, 14TB HDD's (2x4TB, 2x3TB)

Work/Gaming PC - i5 3570k, 8GB RAM, GTX 970, H60 AIO, EVGA SuperNOVA 850W PSU in a Fractal R3 case.

Backup PC - HP Microserver N36L (still chugging along!) 14TB

I picked up the Lenovo server as it was a bargain at the time, but it feels like overkill for just running plex. Most of my streams are Direct Play, so very little transcoding gets done.

The upgrade bug is has kicked in so I'm looking to overhaul my main PC and downsize in the process. Here's what I've come up with:

NZXT H440
8 x 3TB HDD (RAID 6)
Highpoint SAS/SATA 6Gb/s 8 Port RAID Controller
2 x Mini-SAS to SATA
Intel Core i7 6700K
GTX 970 (for now, 1080 when funds permit)
EVGA SuperNOVA 850W PSU
Crucial Ballistix Sport LT 32 GB
NZXT X61 Kraken Watercooler

Undecided on the motherboard and open to recommendations. I'll be looking at something like an Icybox for backing up essential data.

Are there any obvious flaws in my plan? Any advice appreciated!
