Pheasant, what sauce?

Sauce to go with pheasant, any thoughts?

planning a port sauce (port, cream, Dijon) but if there are any Nicer ideas I'm happy to consider.
 
Port, cream and dijon is fantastic with pheasant Ahleckz. Shooting pheasants is a hobby of mine, im not much of a cook myself. But my two sisters, and ones husband are chefs. I leave it to them, and thats one i had one night. Use hen pheasants for best results, as male birds tend to be a little bit tougher.

EDIT: The proper description for a male pheasant doesnt pass the ocuk swear filter.:D
 
Not necessarily a nicer idea as such, but I love a rich Boredelaise sauce with pheasant. Classically used with beef but imo works really well with the gaminess of a pheasant. Bit of a faff to make compared to a cream sauce though.
