I'd be treating it like motorsport although it's unlikely that you'll be able to get any panning shots as you'll have to cope with vertical motion as well as the downstream motion. However it might be interesting to see what effect you get.

So that leaves you with fast shutter shots - 1/500s or so to stop the motion and get some sharp shots of the participants. That should also freeze the motion of the water so you could get some interesting shapes from the waves, splashes etc. If it's this weekend then the light isn't going to be as good as mid summer so wide apertures and high ISOs will probably be the order of the day.
