Photoshop background trim

I'm a lightroom bod with no photoshop software or skills.

I'm going to meet a good friend next month and I want to get a couple of prints of him in his "kite flying uniform", blown up to poster size and transferred onto a 2m high kite for the general amusement of all concerned.

But I need to get rid of the background, so that it is just him on pure white.

Can someone please oblige?

Two images. The first should be very easy with the right tools:

The second will take a little more effort to remove the woman, his glasses, graft on a little bit of thumb where the glasses obscure it and feather the red hair.

How do you guys do this ? I normally use the polygon lasso but sometimes its quite bad quality.

An easy way is the background eraser tool, go around the subject, have another blank layer with the colour of your choice, and just cut out the rest using the lasso tool. If that makes sense...
