I'm looking at getting myself a Pi to play with in the next little while, both as something I can poentially learn a little programming on, and more importantly to do some projects on, so I'm wondering what sort of essentials people would recommend for a Pi that I'm hoping to use to

Learn the basics on.
Interface with a camera or web cam of some sort (preferably good enough for decent CCTV).
Interface with PIR units, magnetic window/door switches.
Interface optionally with mains lighting.

What I'm looking to do is try and learn how it works, and make as an example some form of alarm and remote interface for the garage.
Something along the lines of camera recording when the sensors are tripped, a smoke/fire alarm sensor, email or if possible some form of VOIP call to my mobile to let me know what's happening, and a web page I can log into to see what's happening.
And for the nicer things in life, the ability to turn a heater on in the garage when I want to go out (possibly setting it to turn on at a set time), and turn on a light remotely.

I've seen a variety of kits and bundles for the Pi, and several relay / camera boards but I was wondering if anyone had any recommendations.

Wifi isn't essential as I've got wired connections spare, and homeplugs for where there isn't a wired connection (we have gigabit round the house, and 130mb via homeplug to the garage).
