Pickling chilli's

I know there is a danger with preserved chilli's but is that storing them in oil, is pickling okay.
I was thinking of pouring boiling vinegar over the chilli's and lidding while hot, sterilised jars also.

stick em in freezer they last forever.

I think the key to making chilli or herb oils is to use dried chillies or herbs not fresh otherwise there's a risk of contamination
