Pigs Vs. Lambs liver?

Pigs must be the lesser as it's cheaper and very cheap at that, so i guess that's answered, but what to do with liver, just lightly fry?
 
Lambs liver for me.

Season some flour with salt and pepper, lightly dust the liver in it and fry alongside some nice crispy streaky bacon and onions. Serve with peas, mash and gravy.
