I insta purchased Baldurs Gate 1 and 2 and Icewind Dale when they came out, but I am a little unsure about this. The original version and the GOG release could be modded to bring in a lot of the changes above AFAIK.

Yeah id pick it up. PC classic. And just hope they fully voice it. Hey im willing to lend my voice if they need it!
 
I tried replaying it recently while waiting for Tides of Numenera to come out. Even with the mods I couldn't get the UI and resolution to look how I wanted.
So having the technical side of it updated for todays resolutions is a good thing. Ill get it at some point for sure. (Feel rather let down by Tides of Numenera)

I love PST, and I did manage to get it modded to 21:9 etc and played it through again recently.

I kickstarted ToN and I haven't got around to playing it yet because I am heavily involved in Divinity Original Sin, but I do keep on hearing disappointment associated with it. I will at some point I am sure, but the more I hear about it, the more it continues to drop a peg or two down in my backlog.
