Plastering costs

We've got a plasterer in and his work is good but he's not the sharpest tac in the box and keeps giving us prices verbally and now it's all a bit messy now that I'm trying to get him to confirm things by email.

The main problem is that I don't know how much work or material costs are involved with certain parts.

One of the main bits of this was meshing an open brick wall then skimming. The original quote included the skim (before we removed all the old plaster ourselves), so what would you expect the additional charge to be for the mesh layer? It's approx 3m across, normal height.

Cant really help too much on the wire meshing costs but my plasterer managed a 10' x 12' room in a day at £100. That's with me supplying plaster, having boarded the whole lot out and taped it and also fitting skim beads round the reveals.
 
Yeah we're not doing anything so it's more inclusive. We gave the room to him with one open brick wall, no ceiling (just joists), one stud wall, another wall that he removed all the old plaster from himself etc.

These two walls we stripped back. The brick is the one he's matted:

My BCIS alteration and refurbishment book <£50k project cost says

£18.77 sq m for over 300mm wide areas
£20.66 sq m for isolated areas
£4.87 lm for stop beads
